Ingredients
- 250gbutter/margarine(~1⅛ cups)
- ¾ cupwhite sugar
- ¼ cupyellow/light brown sugar
- 1extra-large egg
- 5ml (1 tsp)vanilla essence
- 2 cups (500ml)cake flour
- 3ml (generous ¼ tsp)baking powder
- 5ml (1 tsp)bicarbonate of soda
- pinchsalt
Method
- 01
Cream butter and both sugars together until fluffy.

Add egg and vanilla and beat.
- 03
Sift dry ingredients together and add to butter mixture.

Mix well.
- 05
Roll into balls and place on baking tray, spaced well apart.

Press flat with a fork.

Bake at 180°C for ± 15–20 minutes.
Notes
Four variants: (1) Peanut Butter: replace half the butter with peanut butter. (2) Custard: reduce flour to 400ml and add 200ml custard powder. (3) Ginger: add 40–45ml (8 tsp / 3 Tbsp) ground ginger. (4) Coconut: add 1 cup desiccated coconut.
