Ingredients

  • 250gbutter/margarine(~1⅛ cups)
  • ¾ cupwhite sugar
  • ¼ cupyellow/light brown sugar
  • 1extra-large egg
  • 5ml (1 tsp)vanilla essence
  • 2 cups (500ml)cake flour
  • 3ml (generous ¼ tsp)baking powder
  • 5ml (1 tsp)bicarbonate of soda
  • pinchsalt

Method

  1. 01

    Cream butter and both sugars together until fluffy.

  2. 02

    Add egg and vanilla and beat.

  3. 03

    Sift dry ingredients together and add to butter mixture.

  4. 04

    Mix well.

  5. 05

    Roll into balls and place on baking tray, spaced well apart.

  6. 06

    Press flat with a fork.

  7. 07

    Bake at 180°C for ± 15–20 minutes.


Notes

Four variants: (1) Peanut Butter: replace half the butter with peanut butter. (2) Custard: reduce flour to 400ml and add 200ml custard powder. (3) Ginger: add 40–45ml (8 tsp / 3 Tbsp) ground ginger. (4) Coconut: add 1 cup desiccated coconut.
