Malinda's Braai Meat Sauce

Ingredients

  • a good glugchutney
  • a splashWorcester sauce
  • a splashsoy sauce
  • a dashvinegar
  • a handfulbrown sugarto taste
  • enough to coverwater
  • a pinchthyme
  • 1–2onionsfinely chopped

Method

  1. 01

    Fry the onions until soft in a pot.

  2. 02

    Throw in all the wet stuff (chutney, Worcester, soy, vinegar, water) plus the sugar, thyme and salt.

  3. 03

    Simmer gently until it thickens a touch and the flavours come together — taste as you go and tweak with a bit more sugar or vinegar to your liking.

    Pull off the heat and let it cool completely.

  5. 05

    Drop the meat in to marinate.


Notes

Hender (chicken) can be cooked in the sauce too. This is a taste-and-go recipe — use your nose and your tongue. Glugs, pinches and splashes, nothing measured. If it tastes good, it's right.
